Founders of Evil Cooks, Elvia Huerta and Alex Garcia, are taking street food to the next level by debuting LA's first ever trompo tricycle on Friday, November 4th.
The two showed off the tricycle at Sara's Market in East LA and it attracted not only the locals but first-timers as well. According to LA Eater, trompo tricycle was "stacked with sliced pork marinated in recado nego, Evil Cooks' signature blackened marinade made of dried chiles, herbs, spices, charred tortilla, and roasted cacoa" and "large flour tortillas warmed on the griddle alongside the trompo."
Garcia was inspired by street vendors in Mexico City and the design features "a vertical rotating spit with a custom 12 by 16 inch comal." The trompo is detachable and is "fitted and mounted atop a repurposed cargo tricyle" and is even has "interchangeable stations that can serve tacos, tamales, and even pizza."
